Corn Bread Casserole

I wanted to wait and share this recipe when it got a little cooler outside
but Tiffanie's mother in law made some PHENOMENAL cornbread on Sunday and it made me miss my
recipe oh so much! I would give BOTH recipes but Miss Sandy won't give it over!
I got this recipe from my cousin Fouad's friend Matt's Mom
Let me tell you I EVERY time I have made this dish for the holidays it was the HIT of the party!
Thanks Matt's Mom!!
I always make this when I make Chili comfort food at its finest

 Ingredients
2 boxes of Jiffy cornbread mix
2 sticks butter, softened in the microwave
2 cans creamed corn
1 pint sour cream
4 eggs
1 tsp. salt
Directions
Put the eggs in the bowl first, and break up the yolks.
Then, mix all the ingredients into the bowl.
Put it into a pan, and bake at 400 for 40 mins.
After you take it out, let it cool and settle for 20 mins.

I always half the recipe if I am just making it for Matt and I and freeze the rest, but if you are making it for a group use the FULL amount!

  2. I seriously love this dish. My mom has been making it for as long as I can remember. We call it corn pudding and you are right, everyone who tries it, loves it.

  6. Thanks for "following" my blog!! This bread looks so good as well. Nothing better than comforting corn bread and some chili. (And as a response to your comment, french onion is REALLY easier than you think. I waited forever because I thought it would be difficult. The worst part is chopping onions).
