I got this recipe from my boyfriends Father Mike.
The funny thing is that he REFUSED to give me this recipe for quite some time
and one day I was flipping through my cook book (one that I let him borrow) and I
saw the recipe right in there!!! Of course in Amy fashion I called Mr. Mike on it right away!
I hope you enjoy this as much as I do Matt ALWAYS has a frozen piece of Salmon

in his freezer just so he can make this!
5 minute prep time if you use the Brussels sprouts other wise 2 minutes!
For the Fish you need:
- One piece of Salmon or any other fish you prefer
- 1 tsp Spicy Brown Mustard ( a little goes a long way)
- 2-3 tsp of honey ( I drizzle more at the end)
- 1/2 cup almonds
Directions
- Spread the brown mustard first
- Then spread the honey ( you can use more if you prefer)
- Add the almonds until it coats the fish
- Drizzle zig zag more honey
- You can cook two ways One is on 350 for 25 -30 minutes OR 400 for 20-25 minutes. I prefer the second way that you the almonds are super toasted my boyfriend prefers them gently toasted.
For the Brussels Sprouts you need:
- 1/4 tsp Balsamic Vinager
- 1/4 tsp Apple Cider Vinager (optional)
- 1/4 tsp Olive Oil
- 1 tsp Honey
- Salt to taste
Directions:
- Combine all ingredients in a bowl
- Toss with Brussels Sprouts
- If you cook on 350 for your fish place the last 15 minutes the Brussels Sprouts or if you cook on 400 10-12 minutes.
- I like mine a little burnt :)
Enjoy!!!!
I've had an almond crusted chicken recipe in my binder for months. I need to try it soon. Your salmon sounds delicious!
ReplyDeleteSounds yummy! And how funny that it was from your cookbook!
ReplyDeleteThe pancakes are great!! This recipe looks wonderful. I love Salmon and usually use Panko if I crust it but the almonds sound really yummy.
